Hiroo Katsuko

Researcher of sociology at Kwansei Gakuin University. Born in Osaka in 1949. After graduating from Kobe University in 1971, worked at Nippon Travel Agency until 2000, mainly in the overseas travel department. Entered Kwansei Gakuin University in 2013 to study the food culture of zuwaigani. Has been in her current post since obtaining her graduate degree, researching the sustainability of crab food culture. Author of Kani to iu dōraku: Zuwaigani to Nihonjin no monogatari (Snow Crab: A Japanese Indulgence), which describes how snow crab became the most aspirational food in Japan.
